Fiesta Fish







Ingredients:
2 pkgs (12 oz each) frozen wild caught flounder (fish fillets) boneless and skinless (thawed)
2 tomatoes
1 fresh lime juice
5 cloves shallot (finely chopped)
2 spoon full vegetable oil
Dried parsley
Salt
Black pepper
1 lime (cut into wedges for garnish)
