Red Velvet Cupcakes

Valentine's Day is coming!
Here is a recipe that is perfect for celebrating the LOVE day :)










 The original recipe from Laura in the kitchen

Cupcakes Ingredients:
  • 1 1/4 cups of all purpose flour
  • 2 tbsp of cocoa powder
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1/4 cup of butter
  • 3/4 cup of sugar
  • 3/4 cup of buttermilk. You can substitute it with 3/4 cup of milk and add 1 tsp of vinegar or lemon juice.
  • 1 large egg
  • 1 tsp of vanilla extract
  • Red food coloring

Frosting Ingredients:
  • 8 oz of cream cheese
  • 1 1/2 cups of confection sugar
  • 2 tbsp of butter
  • 1 tbsp of milk
  • 1 tsp of vanilla extract 
Note:
I modified the frosting ingredients. The frosting from the original recipe is too sweet for my taste.


Directions:
  • Mix together flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  • With the mixer running in low mix the butter then add sugar, egg and vanilla extract. Mix them until well combined.
  • Add a half of flour mixture and following with a half of buttermilk. 
  • Add the remaining of flour mixture and buttermilk and make sure is not over mixing.
  • Turn off the mixer, then with a spatula add the food coloring. Mix the batter until you get the desired red color.
  • Line up 12 cupcake liners. With a large ice cream scoop pour the batter into a cupcake liner. 
  • Bake them in the preheated oven to 350F for 18-20 minutes.
  • Let the cupcakes cool.
  • Meanwhile to make the frosting mix all ingredients with a mixer. Do not over mixing.
  • Set up the piping bag fitted with any decorating tip you want then with a small spatula put the frosting into a piping bag.
  • Decorate the cupcakes as desired.
  • The cupcakes are ready!

Tip:
If the frosting is runny, add 1 tsp of cornstarch with 1/4 cup of milk in the frosting mixture.
In a small sauce pan heat the frosting and keep stirring until it is thick and is not runny.
Let it cool and put into the refrigerator before use it.
