- 8 oz cream cheese (room temperature)
- 1/3 cup of sugar
- 1 large egg
- 1/2 teaspoon of vanilla extract.
Ingredients (chocolate cupcakes):
- 1.5 cups of flour
- 1 cup of sugar
- 1/3 cup of cocoa powder
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 cup of water
- 1/6 cup of shortening
- 1 tablespoon of vinegar
- 1 teaspoon of vanilla extract
Directions:
- Beat the cream cheese with mixer until smooth.
- Add sugar, egg and vanilla extract and beat them together until well combined.
- Set aside.
- In a large bowl sift together flour, sugar, cocoa powder, baking soda and salt.
- In a separate bowl mix together water and vanilla extract.
- Mix dry ingredients and wet ingredients together.
- Add shortening and mix them.
- Mix baking soda and vinegar and pour into the chocolate mixture. Mix them really well.
- Prepare the cupcake pan with the cupcake liners.
- Pour the chocolate mixture into the cupcake liners (using a large size of an ice cream scoop).
- When it's done then add a spoon cream cheese mixture on the top.
- Bake them in 350F for 22 - 25 minutes or until the cream cheese filling has set and a toothpick inserted into the chocolate part will come out clean.
- Let them cool then put them in the refrigerator for about an hour.
