Chocolate Cream Cheese Cupcakes - Easy and Moist







Ingredients (cream cheese):
  • 8 oz cream cheese (room temperature)
  • 1/3 cup of sugar
  • 1 large egg
  • 1/2 teaspoon of vanilla extract.

Ingredients (chocolate cupcakes):
  • 1.5 cups of flour
  • 1 cup of sugar
  • 1/3 cup of cocoa powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 cup of water
  • 1/6 cup of shortening
  • 1 tablespoon of vinegar
  • 1 teaspoon of vanilla extract

Directions:
  • Beat the cream cheese with mixer until smooth.
  • Add sugar, egg and vanilla extract and beat them together until well combined.
  • Set aside.
  • In a large bowl sift together flour, sugar, cocoa powder, baking soda and salt.
  • In a separate bowl mix together water and vanilla extract.
  • Mix dry ingredients and wet ingredients together.
  • Add shortening and mix them.
  • Mix baking soda and vinegar and pour into the chocolate mixture. Mix them really well.
  • Prepare the cupcake pan with the cupcake liners.
  • Pour the chocolate mixture into the cupcake liners (using a large size of an ice cream scoop).
  • When it's done then add a spoon cream cheese mixture on the top.
  • Bake them in 350F for 22 - 25 minutes or until the cream cheese filling has set and a toothpick inserted into the chocolate part will come out clean.
  • Let them cool then put them in the refrigerator for about an hour.
  • Enjoy!
