INGREDIENTS
- 5 pcs chicken thighs (bone-in with skin)
- 1 lime
- 2 big shallots (4 in medium size)
- 2 tsp minced garlic
- 1/2 tsp lemon and pepper
- 1/4 tsp ginger powder
- 1 tsp coriander
- 1/4 tsp tumeric powder
- 1 tsp macademia nuts
- 1/4 tsp galanga powder (substitute: ginger powder in the same amount)
- 2 tbsp dried lemon grass
- 2 dried indonesian bay leaves*
- 1/4 cup water
- Salt and pepper to taste
Note:
*Indonesian bay-leaf or it’s called Daun Salam is not the same as Indian bay-leaf which usually sold at the grocery. Daun Salam is known only in Indonesian and Malay cooking. The leaves are common in the cuisines of Sumatra, Java and Bali. More about Daun Salam (Indonesian Bay-Leaf) you can read here.
BAHAN
- 5 potong ayam paha atas (dengan tulang dan kulit)
- 1 jeruk nipis
- 6-8 bawang merah
- 2-3 bawang putih
- 1/2 sdt lemon and pepper
- 1/4 sdt jahe bubuk
- 1 sdt ketumbar
- 1/4 sdt kunyit bubuk
- 4 butir kemiri, haluskan.
- 1/4 sdt lengkuas bubuk
- 2 sdm serai kering (atau 1 batang serai segar, memarkan)
- 2 lembar daun salam kering*
- 1/4 gelas (60ml) air
- Garam dam merica secukupnya
Keterangan:
*Daun Salam Indonesia tidak sama dengan daun salam dari India yang biasanya dijual di grocery. Daun Salam Indonesia hanya dipakai di masakan Indonesia dan Malaysia. Daun jenis ini sering digunakan untuk masakan dari Sumatra, Jawa dan Bali. Info lebih lanjut mengenai Daun Salam bisa dibaca disini.
