Ayam Bumbu Kuning (Spiced Yellow Chicken)







INGREDIENTS
  • 5 pcs chicken thighs (bone-in with skin)
  • 1 lime
  • 2 big shallots (4 in medium size)
  • 2 tsp minced garlic
  • 1/2 tsp lemon and pepper
  • 1/4 tsp ginger powder
  • 1 tsp coriander
  • 1/4 tsp tumeric powder
  • 1 tsp macademia nuts
  • 1/4 tsp galanga powder (substitute: ginger powder in the same amount)
  • 2 tbsp dried lemon grass
  • 2 dried indonesian bay leaves*
  • 1/4 cup water
  • Salt and pepper to taste


Note:
*Indonesian bay-leaf or it’s called Daun Salam is not the same as Indian bay-leaf which usually sold at the grocery. Daun Salam is known only in Indonesian and Malay cooking. The leaves are common in the cuisines of Sumatra, Java and Bali. More about Daun Salam (Indonesian Bay-Leaf) you can read here.




BAHAN
  • 5 potong ayam paha atas (dengan tulang dan kulit)
  • 1 jeruk nipis
  • 6-8 bawang merah
  • 2-3 bawang putih
  • 1/2 sdt lemon and pepper
  • 1/4 sdt jahe bubuk
  • 1 sdt ketumbar
  • 1/4 sdt kunyit bubuk
  • 4 butir kemiri, haluskan.
  • 1/4 sdt lengkuas bubuk
  • 2 sdm serai kering (atau 1 batang serai segar, memarkan)
  • 2 lembar daun salam kering*
  • 1/4 gelas (60ml) air
  • Garam dam merica secukupnya


Keterangan:
*Daun Salam Indonesia tidak sama dengan daun salam dari India yang biasanya dijual di grocery. Daun Salam Indonesia hanya dipakai di masakan Indonesia dan Malaysia. Daun jenis ini sering digunakan untuk masakan dari Sumatra, Jawa dan Bali. Info lebih lanjut mengenai Daun Salam bisa dibaca disini.

Dendeng Sapi (Spiced Beef Jerky)







INGREDIENTS
  • 1 lb sirloin steak, wash and cut.
  • 1 large russet potato, peel off the skin, wash and cut.
  • 1/4 tsp ginger powder
  • 1 tsp coriander
  • 3 tsp minced garlic
  • 3 cloves pearl onions/shallots
  • 1 tsp crushed red pepper
  • 1/2 cup water, divided into 1/4 cup
  • 1 lime, cut a half (a half for juice, a half for garnish)
  • Salt and pepper to taste
  • Olive oil
Serve with white rice.




BAHAN
  • 450 gr daging sapi, cuci dan potong.
  • 1 kentang ukuran besar, kupas kulitnya, cuci dan potong.
  • 1/4 sdt jahe bubuk
  • 1 sdt ketumbar
  • 3 sdt (2 siung) bawang putih yang sudah dihaluskan.
  • 3 siung bawang merah ukuran besar (5 siung bawang merah ukuran kecil).
  • 1 sdt paprika kering
  • 1/2 gelas (118 ml) air, dibagi menjadi 1/4 gelas (59 ml)
  • 1 jeruk nipis, dibagi dua (setengah diambil airnya, setengah untuk hiasan)
  • Garam dan merica secukupnya
  • Minyak zaitun (bisa diganti dengan minyak goreng)
Hindangkan dengan nasi putih.

Fried Rice






INGREDIENTS

CHICKEN BITES
  • 4 lbs chicken breast (boneless, skinless) washed and cut into bite pieces
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil


FRIED RICE
  • 3 - 4 cups cooked rice, cold.
  • 1 onion, chopped.
  • 1/2 cup frozen peas, thawed.
  • 1/2 cup soy sauce
  • 3 eggs
  • Salt and pepper as desired
  • 2 - 3 tbsp olive oil




BAHAN

AYAM GORENG:
  • 1.8 kg dada ayam (tanpa tulang dan tanpa kulit) cuci dan potong kecil
  • 1 gelas (227gr) terigu protein sedang
  • 1/2 sdt garam
  • 1/2 sdt merica
  • 1/4 gelas (60 ml) minyak zaitun*


NASI GORENG
  • 3 - 4 gelas (170 - 227gr) nasi dingin
  • 1 bawang bombay, dipotong.
  • 1/2 gelas (113gr) kacang polong beku, biarkan hingga lembek.
  • 1/2 gelas (118 ml) kecap asin
  • 3 butir telur
  • Garam dan merica secukupnya
  • 2 - 3 sdm minyak zaitun*

*bisa diganti dengan minyak goreng biasa.

Bourbon Chicken






INGREDIENTS
  • 2 lbs chicken breast (boneless and skinless) washed and cut into thin bite size pieces
  • 2 tbsp olive oil
  • 1/3 cup soy sauce
  • 1/4 cup orange juice
  • 1 tbsp apple cider vinegar
  • 2 tbsp ketchup
  • 3/4 tsp red pepper flakes
  • 1/4 tsp ginger powder
  • 1/3 cup brown sugar
  • 1/2 tsp minced garlic
  • 1/4 tsp salt
  • 1/2 cup water
  • 1 tbsp cornstarch
  • 2 tbsp green onion (for garnish)
Bourbon chicken is a dish named after Bourbon Street in New Orleans, Louisiana. The dish is commonly found at Cajun-themed Chinese restaurants (source: wikipedia).



BAHAN
  • 905 gr dada ayam tanpa tulang dan tanpa kuit. Cuci dan potong tipis.
  • 2 sdm minyak zaitun
  • 71 ml kecap asin
  • 59 ml jus jeruk
  • 1 sdm cuka apel
  • 2 sdm saos tomat
  • 3/4 sdt paprika kering
  • 1/4 sdt jahe bubuk
  • 85 gr brown sugar (bisa diganti dengan gula pair tapi kurangi takarannya setengah)
  • 1/2 sdt bawang putih tumbuk halus
  • 1/4 sdt garam
  • 118 ml air
  • 1 sdm tepung maizena
  • 2 sdm daun bawang (sebagai hiasan)
Dinamakan Bourbon Chicken karena diambil dari nama restaurant yang teletak di jalan Bourbon di New Orleans, Louisiana. Masakan ini cukup popular di restaurant Chinese (sumber: wikipedia)

Bacon Ranch Teriyaki Chicken





INGREDIENTS:
6 pieces chicken breast (boneless and skinless)
1/2 cup Teriyaki sauce
1/2 cup ranch salad dressing
1 cup shredded cheddar cheese
4 sticks green onion
1/3 cup bacon bits



BAHAN:
6 dada yam (tanpa tulang dan tanpa kulit)
1/2 gelas (118 ml) saos Teriyaki
1/2 gelas (118 ml) saos ranch untuk salad
1 gelas (227gr) keju cheddar parut
4 batang daun bawang
1/3 gelas (85gr) bacon bits

Sweet and Sour Chicken







INGREDIENTS:
1 lb chicken tenders
2 red bell peppers
3 celery ribs
1 onion
1/2 cup pineapple chunks (with syrup)
1/2 cup ketchup
1/3 cup apple cider vinegar
1/3 cup packed brown sugar
3 tbsp all purpose flour
1/2 tsp ground black pepper
1/2 tsp salt
1/2 tsp garlic powder

*served this with white rice



BAHAN:
1 lb (450 gr) ayam tenderloin
2 paprika merah
3 batang (pangkal bagian bawah) seledri
1 bawang bombay
1/2 gelas (113 gr) nenas kalengan (gunakan dgn sirup)
1/2 gelas (118 ml) saos tomat
1/3 gelas (71 ml) cuka epal
1/3 gelas (85 gr) brown sugar (padatkan)
3 sdm terigu protein sedang
1/2 sdt merica bubuk
1/2 sdt garam
1/2 sdt bawang putih bubuk

*hidangkan bersama nasi putih

Christmas Mini Sausage Wreath






Ingredients:
1 can refrigerated seamless dough sheet
1 pkg mini sausages
1 red bell pepper (for garnish)
1/2 cup cranberry sauce
1/2 cup barbecue sauce




Bahan:
1 kaleng refrigerated seamless dough sheet
1 paket sosis mini
1 paprika warna merah (sebagai penghias)
4 oz saos cranberry
4 oz saos barbeque

Quiche Lorraine






Ingredients:
1/3 onion
1 cup shredded swiss cheese
12 slices bacon, crisply cooked and crumbled
4 large eggs
2 cups milk
¼ tsp salt
¼ tsp black pepper
¼ tsp ground cayenne pepper
1 crust pie, you can use your own recipe
* I use crust pie from the grocery



Bahan:
1/3 bawang Bombay
8 oz keju swiss parut
12 helai bacon, masak hingga garing dan dipotong kecil
4 butir telur
16 oz susu putih cair
¼ sdt garam
¼ sdt merica hitam
¼ tsp cabe merah bubuk
1 adonan pie, resep sesuai selera.
*saya memakai adonan pie yg sudah jadi dari grocery

Western Egg Casserole







Ingredients
½ onion
2 small red peppers
8 oz cooked smoked ham
¾ cup breadcrumbs
2 tbsp unsalted butter (divided 1 tbsp each)
8 large eggs
1 tsp Worcestershire sauce
½ tsp salt
¼ tsp black pepper
½ cup shredded cheddar cheese



Bahan
½ bawang Bombay
2 paprika merah ukuran kecil
225 gr daging ham yg sdh matang dan diasapi
6 oz tepung roti
2 sdm mentega tawar (pisahkan masing-masing 1 sdm)
8 butir telur
1 sdt kecap inggris
½ sdt garam
¼ sdt merica hitam
4 oz keju parut cheddar
